The elaboration takes place separately. A pre-fermentative maceration is carried out at 12ºC for three days. After this, the alcoholic fermentation takes place during ten days. Afterwards the wine is taken out of the casks to carry out the malolactic fermentation in American, French and Caucasian oak barrels.
